Baked Moi-Moi (Bean cake) with Plantain topping

A gentle embrace of wholesome flavours, this baked bean cake layers velvety-smooth honey beans with fragrant tomato, onion, and garlic, all lightened with olive oil and tenderly whisked into a playful, fluffy batter. Topped with sweet slices of ripe plantain and oven-baked until golden, each slice offers a delightful balance of cosy comfort and nourishing goodness. Warm, inviting, and subtly indulgent, it’s the kind of dish that brings family together with every soft, flavourful bite.

Ingredients

  • 2 cups honey beans, soaked and drained
  • 2 ripe plantains, peeled and sliced
  • 1 large tomato
  • 1 medium onion
  • 2 garlic cloves
  • ½ cup oyster mushrooms, chopped
  • 2 tbsp olive oil
  • Salt, to taste
  • Water, as needed

Instructions

  1. Blend the Base
    • Rinse the soaked beans and blend with just enough water until completely smooth.
    • Separately, blend the tomato, onion, and garlic into a fine paste.
  2. Combine and season
    • In a mixing bowl, stir together the blended beans and tomato paste.
    • Add salt, chopped mushrooms, and olive oil. Taste and adjust seasoning as needed.
  3. Whisk for Lightness
    • Whisk the mixture vigorously until airy and slightly fluffy—small bubbles along the edge create the perfect texture.
  4. Layer and Bake
    • Preheat your oven to 180°C (350°F).
    • Grease a baking pan lightly with oil.
    • Pour in the bean mixture, smoothing the top.
    • Evenly arrange the sliced plantains on top of the bean base.
  5. Bake Until Set
    • Bake in the middle rack for 45–60 minutes, or until a fork or skewer inserted into the center comes out clean.
  6. Cool and Serve
    • Turn off the oven and let the dish cool slightly.
    • Transfer to a serving plate, slice into portions, and enjoy!
