
Beans, Corn and Coconut Porridge Recipe

Ingredients
- 1 cup Corn (boiled until soft)
- 1 cup Beans (boiled until soft)
- Coconut water
- 1/2 cup Grated onions
- 1/2 tbs Salt
- 1 tsp Turmeric
- 1/4 cup Garlic (optional)
Instructions
- Boil corn and beans separately until tender.
- Pour coconut water into a pot.
- Add grated onions, salt, turmeric, and garlic (if using). Bring to a boil.
- Add the cooked beans and corn.
- Simmer until the liquid reduces to a thick porridge or your desired consistency.
- Serve warm.
Notes
For extra flavour and natural sweetness, feel free to add chopped tomatoes, ripe plantain, or diced sweet potatoes while simmering. They blend beautifully with the coconut base and enhance the porridge’s richness and colour.
