Ingredients

- 10 small tomatoes
- 1 medium onion
- ¼ cup of oil
- 1 teaspoon salt
- 1 teaspoon herb mix
Instructions
- Wash the 10 small tomatoes and onions thoroughly.
- Peel and roughly chop the medium onion.
- Place the whole tomatoes and the chopped onion into a pot.
- Simmer for 45 minutes, on low heat for slow cooking.
- Turn off the heat and let it cool for 30 minutes.
- Using a knife pop the tomatoes to let the water out and store them separately.
- Blend the tomatoes until it is a smooth paste or use a fork to mash thoroughly.
- Return the blended mixture to the pot and set to medium heat.
- Add oil, salt, and herb mix and stir well.
- Bring to a boil for an additional 15 minutes.
- Turn off the heat and let the tomato paste cool completely.
- Transfer the paste to an airtight container.
- Rinse the tomato paste pot with 1 cup of warm water.
- Add to the stored tomato water to make a tasty tomato broth.
- Store all in the freezer for long-term preservation.
Notes
For an extra burst of flavour, consider adding a pinch of herbs, a tsp of honey or a squeeze of lemon juice while blending.
