DELICIOUS, HEALTHY BAKED PLANTAIN (DODO OR BOLE) WITH MINIMAL OIL
Overripe plantains can be tricky to cook—they’re too soft to fry, boil, or eat raw. Instead, turn them into delicious puddings, like our Bambara (Okpa) recipe, or bake them into sweet, on-the-go treats! Plantains are a fantastic energy source, so skip the deep frying and try these healthier, waste-free options!

- 2 very ripe plantains
- ½ tbsp of oil
Instructions
- Wash and peel the plantains.
- Oil your baking tray.
- Halve the plantains and place them evenly spaced on the baking tray.
- Place on the second rack in the oven not too close to the fire.
- Bake on low heat for 30 minutes.
- Flip the plantains to the other side and bake for another 15 minutes.
- Turn off the oven and leave to cool a bit before serving.
Notes
- Oiling the baking tray properly is key to having well-baked plantain that doesn’t stick to the trays.
- Adding salt and seasonings after halving the plantain is a good way to make it flavourful.
