Ingredients

  • ¼ cup raw groundnuts (peanuts)
  • 2 cups parboiled rice
  • ½ cup homemade tomato paste (see recipe)
  • ⅛ cup groundnut oil
  • 1 medium onion, finely chopped
  • 1 teaspoon mixed seasoning (rosemary and sage)
  • ½ tablespoon sea salt (adjust to taste)
  • 5 fresh oregano leaves, finely chopped

Optional Add-ins

  • Pumpkin seeds, diced carrots, or green peppers for added colour and nutrition.
  • Replace water with coconut milk or vegetable stock for enhanced flavour.
  • 4 Baked plantains (See Recipe)
  • Steamed vegetables

Notes

  • Ensure groundnuts and pumpkin seeds are soft before adding them to the rice. If using dried groundnuts or seeds, boil them for 10–15 minutes before adding.
  • Adjust salt and seasoning to taste.
  • Experiment with coconut milk or vegetable stock for a richer flavour.
