Ingredients
- ¼ cup raw groundnuts (peanuts)
- 2 cups parboiled rice
- ½ cup homemade tomato paste (see recipe)
- ⅛ cup groundnut oil
- 1 medium onion, finely chopped
- 1 teaspoon mixed seasoning (rosemary and sage)
- ½ tablespoon sea salt (adjust to taste)
- 5 fresh oregano leaves, finely chopped
Optional Add-ins
- Pumpkin seeds, diced carrots, or green peppers for added colour and nutrition.
- Replace water with coconut milk or vegetable stock for enhanced flavour.
- 4 Baked plantains (See Recipe)
- Steamed vegetables
Instructions
- Heat a pot on low heat and pour in the tomato paste. Steam for 10 minutes.
- Add onions, salt, mixed seasoning, and groundnuts. Simmer on low heat for 10 minutes.
- Scoop out ½ cup of the tomato paste mixture and set aside.
- Add parboiled rice to the pot and mix well.
- Pour in 4 cups of water (enough to cover the rice slightly).
- Cover the pot and simmer on low heat for 20 minutes, until the rice is almost fully cooked.
- Add the reserved tomato paste and sprinkle in chopped oregano leaves (and optional vegetables).
- Cook for 5 minutes until the water evaporates and the rice is tender.
- Turn off the heat, fluff the rice, and serve warm.
Notes
- Ensure groundnuts and pumpkin seeds are soft before adding them to the rice. If using dried groundnuts or seeds, boil them for 10–15 minutes before adding.
- Adjust salt and seasoning to taste.
- Experiment with coconut milk or vegetable stock for a richer flavour.
