Sweet to Savour Jollof Guinea Corn

Guinea Corn Porridge is a warm, nourishing dish made from boiled guinea corn and enriched with fresh tomatoes, onions, and a touch of oil. This simple yet flavorful porridge is a staple in many African homes, celebrated for its hearty texture and rich nutritional value. Lightly seasoned and slow-cooked to allow the ingredients to blend beautifully, it’s best enjoyed with baked plantains or any side of your choice. Ingredients

  • Guinea corn
  • Salt
  • Onions (sliced)
  • Tomatoes (diced)
  • Cooking oil
  • Water

 

Instructions

  • Rinse the guinea corn thoroughly and boil it in water until it becomes soft and tender.
  • Once cooked, add salt, onions, tomatoes, and a drop of oil.
  • Allow the mixture to simmer gently, letting the flavours infuse and the liquid reduce slightly.
  • Serve warm with baked plantains or any preferred side dish.

 

Notes

Before cooking, ensure you wash the guinea corn thoroughly. Place the grains in a bowl and rinse with clean water several times, gently rubbing them between your fingers to remove dust, dirt, or unwanted particles. You may notice some husks or debris float to the top. Skim these off and discard. Repeat the process until the water runs clear. Proper washing not only ensures cleanliness but also improves the taste and texture of the final dish.
