Veggie Pie Recipe

These wholesome Veggie Pies are a delightful fusion of sweet and savory, featuring a soft jaggery-based dough wrapped around a vibrant mix of cabbage, carrots, onions, and optional tofu. Baked to golden perfection, each pie offers a comforting bite that’s both nourishing and satisfying. The pie is a perfect plant-based treat for any time of day.

Ingredients

For the Dough:

2 cups melted jaggery

1 cup vegetable oil

2 cups wheat flour

½ cup corn flour (optional)

For the Filling:

1½ cups shredded cabbage

1 cup grated carrots

½ cup chopped onions

¼ cup chopped spring onions

½ cup grated tofu (optional)

Salt to taste

1 tsp olive oil

Instructions

Prepare the Dough:

  1. In a large mixing bowl, combine melted jaggery and oil.
  2. Mix in corn flour (if using), followed by the wheat flour.
  3. Knead until the dough is soft, smooth, and not sticky. Set aside.

Prepare the Filling:

  1. Grate or finely chop all the vegetables and tofu.
  2. Place in a pot, season with salt, and steam over medium heat until the moisture evaporates.
  3. Stir in the olive oil, then remove from heat and let cool.

Assemble the Pies:

  1. Divide the dough into equal portions and roll each into a ball.
  2. Lightly oil your work surface and rolling pin.
  3. Roll each ball into a not-too-thin flat disc.
  4. Place the dough on a pie maker or baking tray.
  5. Add a spoonful of filling to one side of the dough, then fold and seal the edges.
  6. Repeat with remaining dough and filling.

Bake:

  1. Preheat your oven to 180°C (350°F).
  2. Bake pies on the middle rack for 40–45 minutes, or until golden brown.
  3. Test doneness with a fork — it should come out clean.

Notes

For best results, don’t overfill the pies, or they may break open. Too little filling can make the pies taste more like bread. Keep the dough not too thick, and feel free to try different amounts of filling and seasoning until it tastes just right.
